Ingredients

  • cups Potatoes
  • 1/4 teaspoon Mustard Seeds
  • 1/2 teaspoon Cumin Seeds
  • 2 teaspoons Green Chilli-Ginger Paste
  • 1 Tomato
  • 1 pinch Asafoetida
  • 1/4 teaspoon Turmeric Powder
  • 1 teaspoon Red Chilli Powder
  • 2 teaspoons Cumin-Coriander Powder
  • 1 teaspoon Sugar
  • 2 tablespoons Cooking Oil
  • tablespoons Fresh Coriander Leaves
  • cups Water
  • Salt

Instructions

  1. 1.
    Heat oil in a heavy bottomed pan or kadai.
  2. 2.
    Add mustard seeds; when they begin to crackle, add cumin seeds and asafoetida followed by green chilli-ginger paste.
  3. 3.
    Stir and mix well.
  4. 4.
    Add cubed potatoes and sauté for 3-4 minutes.
  5. 5.
    Add chopped tomatoes, salt and sugar and sauté for 3 minutes.
  6. 6.
    Add red chilli powder and turmeric powder and sauté for 1 minute.
  7. 7.
    Add 1¼ cups water and let mixture boil over medium flame.
  8. 8.
    When boils, cook covered on medium to low flame until potatoes are cooked, stir every 4-5 minutes.
  9. 9.
    It would take around 10-15 minutes to cook completely.
  10. 10.
    If required, add more water and cook for few more minutes.
  11. 11.
    Add cumin-coriander powder, mix well.
  12. 12.
    Turn off the heat.
  13. 13.
    Transfer it to a serving bowl, garnish with fresh coriander leaves and serve.
