- 2.Add 1/2 teaspoon turmeric powder to the chopped bitter gourd.
- 3.Add a little salt to the bitter gourd.
- 4.Mix the turmeric and salt well with the bitter gourd.
- 5.Let the bitter gourd rest for 15 minutes.
- 6.Heat oil in a kadhai (pan) for frying; you will need a bit more oil to fry the onions.
- 7.Add 1 teaspoon cumin seeds to the hot oil.
- 8.Add 2 lengthwise chopped, thinly sliced onions to the oil.
- 9.Fry the onions on medium heat until they become golden brown and crispy.

- 12.Add the squeezed bitter gourd to the same oil and deep-fry them on medium heat until crispy and golden brown.
- 13.Remove the deep-fried bitter gourd from the oil and place them in a bowl, draining the excess oil.
- 14.Remove most of the oil from the kadhai, leaving only a small amount.
- 15.Add the fried bitter gourd and fried onions back into the kadhai.
- 16.Keep the gas flame low.
- 17.Add 1 to 1.5 teaspoons of Dhanna Jeera powder.
- 18.Add 1 to 1.5 teaspoons of red chili powder.
- 19.Add 3/4 teaspoon of Amchur powder.
