- 2 cups all-purpose flour
- 2/3 cup milk
- 1/4 cup sugar
- 7/8 tsp salt
- 1/4 oz fresh yeast
- 2 1/8 tbsp butter
- 2/3 cup cold unsalted butter
- 1 egg
- 1 tbsp milk
Instructions
- 1.Make the Dough Add milk, sugar, and yeast into Thermomix bowl→ 2 min / 99°F / speed 2
- 2.Add flour, salt, and butter→ 3 min / dough mode
- 3.Remove dough, shape into a ball, cover
- 4.Chill in fridge for 1–2 hours
- 5.Prepare Butter Block Place butter between parchment paper
- 6.Roll into a 15×15 cm square
- 7.Refrigerate until firm but pliable
- 8.Lamination (Folding Process) Roll dough into a rectangle (about 20×30 cm)
- 9.Place butter in center, fold like an envelope
- 10.Roll out and fold into thirds (like a letter)
- 11.Chill 30 minutes
- 12.Repeat folding 3 times total 👉 This creates the flaky layers
- 13.Shape Croissants Roll dough to ~4 mm thickness
- 14.Cut into triangles
- 15.Roll each triangle tightly from base to tip
- 16.Curve slightly into crescent shape
- 17.Proofing Let croissants rise at room temp for 1.5–2 hours
- 18.They should double in size
- 19.Bake Preheat oven to 200°C (390°F)
- 20.Brush with egg wash
- 21.Bake 15–20 minutes until golden brown
