- 8 pcs egg
- 2 pcs onion (small, finely chopped)
- 2 pcs tomato (small, finely chopped)
- 2 pcs green chili (finely chopped)
- 1 inch ginger (finely chopped)
- 4 pcs garlic (cloves, finely chopped)
- 2 tbsp coriander leaves (chopped)
- 1 tbsp mint (chopped)
- 1 tbsp oil
- 1 tbsp butter
- 1 pinch turmeric powder
- 1 pinch red chili powder
- 1 pinch cumin powder
- 1 pinch black pepper
- 0.5 tsp salt
Instructions
- 1.Finely chop the onion, tomato, green chili, ginger, garlic, coriander leaves, and mint.
- 2.Crack the eggs into a bowl.
- 3.Add black pepper and a small pinch of the salt to the eggs and beat lightly until just mixed.
- 4.Heat oil and butter in a pan over medium-low heat.
- 5.Add onion and cook until soft but not browned, about 3 to 4 minutes.
- 6.Add ginger, garlic, and green chili, then cook for 1 minute.
- 7.Add tomato, turmeric powder, red chili powder, cumin powder, and the remaining salt.
- 8.Cook until the tomatoes soften and the mixture looks slightly jammy, about 2 to 3 minutes.
- 9.Lower the heat to low.
- 10.Pour in the beaten eggs and stir slowly with a spatula.
- 11.Scrape the pan gently as the eggs begin to set.
- 12.Cook until the akuri is softly scrambled and still a little creamy, about 2 to 3 minutes.
- 13.Turn off the heat and fold in the coriander leaves and mint.
- 14.Mix gently so the herbs stay fresh and bright.
- 15.Spoon into katoris and serve right away while soft and creamy.
