
Chicken Malai Boti Kebabs

- 2 lbs boneless chicken
- 2 medium onions
- 1/2 red bell pepper
- Handful cilantro
- 3–4 green chilies
- 1 tbsp ginger-garlic paste
- 1 tbsp lemon juice
- 1 1/2 tsp garam masala powder
- 1/2 tsp black pepper powder
- 1/2 tsp white pepper powder
- 1 tsp crushed red pepper flakes
- 1 tsp chicken powder
- 1 1/2 tsp salt
- 1 tbsp ghee or butter
- 3 tbsp fresh cream
Instructions
- 1.1️⃣ In a food processor, add onions, red bell pepper, cilantro, and green chilies. Blend until finely chopped.
- 2.2️⃣ Transfer the mixture to a kitchen towel and squeeze out the excess water. Set aside.
- 3.3️⃣ Add the chicken pieces to a food processor and blend until smooth. You can also use ground chicken for this recipe.
- 4.4️⃣ Transfer the chicken to a mixing bowl. Add lemon juice, ginger-garlic paste, the onion mixture, spices, and fresh cream. Mix well.
- 5.5️⃣ For a smoky flavor, heat a small piece of charcoal on the stove. Place it in a small bowl or foil in the center of the chicken mixture, drizzle with oil, cover, and let it smoke for 5 minutes.
- 6.6️⃣ Marinate the mixture for about 1 hour.
- 7.7️⃣ Brush a sheet pan with oil, spread the chicken mixture evenly, and brush the top with oil.
- 8.8️⃣ Make vertical cuts in the mixture so the kebabs are easier to separate after baking.
- 9.9️⃣ Bake at 350°F for 25–30 minutes. For a golden top, broil for 5–7 minutes.
